The Mediterranean Sea is undoubtedly one of the seas richest in fish species: there are over 500 edible fish species, excellent in quality and nutritional values.
Despite this wide availability, our consumption choices continue to be concentrated on no more than twenty species.
We need to learn to diversify our purchases and choose the fish caught near the place in which it is sold: in this way we will avoid wastefulness, the rejection of unwanted species and over-exploitation. We will finally discover that there are a great many species that are quite unknown or forgotten and are fresher, inexpensive and have great culinary potential.
